For each ball: using a mixer, blend all but the last ingredient. When well-blended, scoop it all up into your hands and work into a ball. Set each ball on a plate. Cover with plastic wrap and refrigerate for at least one hour or until ready to serve.
Just before serving, roll each ball in its corresponding crushed cracker/chip. Garnish with a full cracker/chip to make it clear which ball is which.
