Better Call Saul Cheddar Ball Saul Trio

Ingredients
New Mexican
  • 4 oz cream cheese, room temperature
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • ⅓ cup cheddar cheese, shredded
  • ¼ cup pulled pork, chopped
  • 2 tbsp chipotle peppers, chopped
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • salt & pepper
  • tortilla chips, crushed
Irish
  • 4 oz cream cheese, room temperature
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • ⅓ cup white cheddar, shredded
  • 2 tbsp onion, diced
  • 2 oz chipped beef, chopped
  • ½ tsp celery seeds
  • salt & pepper
  • potato chips, crushed
Jewish
  • 4 oz cream cheese, room temperature
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • ¼ cup swiss cheese, shredded
  • ¼ cup white cheddar, shredded
  • ⅓ cup lox, chopped
  • 2 tbsp onion, diced
  • 1 tbsp capers
  • 1 tsp poppy seeds
  • ¼ tsp garlic powder
  • salt & pepper
  • matzo crackers, crushed
Instructions
  1. For each ball: using a mixer, blend all but the last ingredient. When well-blended, scoop it all up into your hands and work into a ball. Set each ball on a plate. Cover with plastic wrap and refrigerate for at least one hour or until ready to serve.
  2. Just before serving, roll each ball in its corresponding crushed cracker/chip. Garnish with a full cracker/chip to make it clear which ball is which.
  3. Serve.
