Baked Dinosaur Eggs

Ingredients
  • 4 hard boiled eggs (peeled)
  • 1 lb pork sausage
  • 1 tbsp minced red onion
  • ½ tsp salt
  • ½ cup all purpose flour
  • ⅗ cup panko bread crumbs
  • 1 egg, beaten
Instructions
  1. Heat oven to 400°F.
  2. Set up 5 bowls. One mixing bowl for the pork. One for the flour. One for the beaten egg. One for the breadcrumbs.
  3. Using your hands, blend together sausage, onion and salt. Shape into four patties.
  4. Roll each hard boiled egg in the flour. Make sure you fully coat them. Place one on each sausage patty and shape it around the egg.
  5. Dip the egg-stuffed pork ball into the beaten egg, followed by the breadcrumbs.
  6. Place on a cookie sheet and bake for 35 minutes or until sausage is cooked all the way through.
