Baked Dinosaur Eggs
- 4 hard boiled eggs (peeled)
- 1 lb pork sausage
- 1 tbsp minced red onion
- ½ tsp salt
- ½ cup all purpose flour
- ⅗ cup panko bread crumbs
- 1 egg, beaten
- Heat oven to 400°F.
- Set up 5 bowls. One mixing bowl for the pork. One for the flour. One for the beaten egg. One for the breadcrumbs.
- Using your hands, blend together sausage, onion and salt. Shape into four patties.
- Roll each hard boiled egg in the flour. Make sure you fully coat them. Place one on each sausage patty and shape it around the egg.
- Dip the egg-stuffed pork ball into the beaten egg, followed by the breadcrumbs.
- Place on a cookie sheet and bake for 35 minutes or until sausage is cooked all the way through.
