You Can't Even Taste the Baby Pancake

  • 3 tbsp butter, unsalted
  • 3 large eggs
  • ¾ cup milk
  • ½ cup flour
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • ¼ cup sugar (plus more for dusting)

  1. Preheat oven to 425°F.
  2. In a blender, dump eggs, milk, flour, salt, vanilla and sugar. Blend for about a minute or until foamy on top.
  3. Melt 2 tbsp butter in a cast iron skillet. Swirl it around to get the edges. Pour batter into the skillet. Bake for 20 minutes.
  4. Remove and dot with remaining butter, dust with some sugar and squeeze some lemon juice. Devour immediately.
